White chocolate is made differently from regular chocolate because it doesn’t contain cocoa solids, which are responsible for the dark color in chocolate. Instead, white chocolate is made from cocoa butter, milk solids, and sugar. Cocoa butter is the fat extracted from cocoa beans. To make white chocolate, they mix cocoa butter with milk solids and sugar. The result is a creamy and sweet treat that doesn’t have the strong cocoa flavor of dark or milk chocolate. I find it fascinating how just by changing the ingredients a bit, we can get a completely different kind of chocolate!
