The natural color of cocoa butter is pale yellow, not white. When combined with the milk solids and sugar, it results in a creamy, ivory-colored confection. Manufacturers refrain from using cocoa solids, the darker components of the cocoa bean, which gives other chocolates their color. As a result, white chocolate lacks the characteristic brown color associated with regular chocolate, despite its name. From my experience, the absence of cocoa solids distinguishes white chocolate’s appearance and taste from other chocolate varieties.
